 | CIVIL WAR DINNER – Students in Dr. Phil McManus’ Culinary Arts program at Dabney S. Lancaster Community College spent several weeks researching and preparing for the Blue and Gray Banquet hosted by the Greater Alleghany Highlands Virginia Tech Alumni Association and the Covington-Hot Springs Rotary Club on February 14 at DSLCC’s Moomaw Center. Students found a number of menu items that would have been offered during the Civil War period, both by the North and South. Some of the Southern items were fried chicken and catfish, black-eyed pea salad, and fried green tomatoes,while on the Northern menu were Yankee pot roast, German potato salad and Boston cream pie, among many others.
